Pork Enchiladas

Ingredients: 
1 small onion, diced
1 green pepper, diced
3 cloves garlic, minced
1 pound pasture raised ground pork
2 tablespoons taco seasoning
6 tortillas
2 cups enchilada sauce
2 cups shredded cheese

Toppings: lime, cilantro, sour cream

Directions:
Heat a cast iron pan to medium high heat. Add a drizzle of oil to the pan. Add pepper and onions and cook until tender, about 4-6 minutes. Add garlic and cook until fragrant. Remove from pan. Add ground pork and cook until browned. Add taco seasoning, stir to combine. Add peppers and onions back to pan. Fill tortillas with meat mixture and place in 9x13 pan. Repeat until all tortillas are filled. Pour enchilada sauce on top. Add cheese on top. Bake at 475 until sauce is bubbly and cheese is melted. Enjoy!
